ABOUT JOLLOF FEST

Jollof Fest is a culinary research, innovation and development platform founded by chef and food developer Paco Alioune B. Ndiaye.

We explore African ingredients, culinary traditions and food knowledge to create contemporary dishes, scalable products and new business opportunities. Our approach connects African culinary heritage with European food technology and Nordic perspectives on sustainability, quality and design.

Nomad Food & Wine serves as our living laboratory in Helsinki. Ideas are developed and tested under real restaurant conditions, helping us understand flavour, functionality, guest response, production potential and adaptation for different markets.

The knowledge generated through this work becomes the foundation for product development, consulting and collaboration between Africa and Europe.

We are not simply introducing African food to new markets. We are helping build its future—while protecting the identity, knowledge and stories from which it comes.
